FUNNEL CAKES
2 eggs, beaten
2 cups milk
4 cups sifted all-purpose flour
1/3 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder
Shortening for deep frying
Confectioners sugar
Beat eggs with milk - gradually beat in flour, sugar,
salt and baking powder until very smooth. Holding
the opening of a funnel closed with your forefinger
and fill funnel with batter. Controlling the flow
with your forefinger dribble the batter into hot oil
(375°) starting at the center of pan and swirling
batter outward in a circle. Fry 2 or 3 minutes or until
brown. Drain on absorbent paper and sprinkle with
confectioners sugar. Makes about 2 dozen cakes
depending on size.
