View of the refrigerated brine tank. Floating in the
tank filled with salt brine are Swiss Cheese weighing
approx. 200 pounds each and Baby Swiss Cheese
weighing approx. 442-5 pounds each. The brine serves
to cool the cheese and to make it firm for handling.
The brine does not add salt to the cheese.
