Follow it carefully and you will have the finest
Thousand Island Dressing in the world.
Thousand Island Dressing
Two cups olive oil, yolks of three eggs, one-half
cup vinegar. Make this carefully into a smooth and
well-blended mayonnaise. It will take fully one-half
hour, but the success of the dressing depends upon
the mayonnaise. Now stir in slowly one-half bottle
Chili sauce, until well mixed with mayonnaise.
Then chop together (very fine) one bunch chives,
three hard-boiled eggs, two pimentos and one-half
green pepper. Add paprika and salt to taste and
mix well with the mayonnaise. This will make
about one quart of dressing. If képt in a cool
place and covered it will keep a long time.
