These Directions are reliable and are in daily use by
first-class cooks.
Use the best flour; it is the cheapest. Make small loaves and
bake well.
This Yeast is good as long as it keeps firm and hard,
even if discolored, but when it is soft and puffs up itis spoiled.
We advise all to use the Morning Directions at first, as
this Yeast is quicker than any other known.
WHITE BREAD.-QUICK DIRECTIONS FOR USE IN THE
MORNING-Makes 4 loaves-Dissolve thoroughly I cake of our Yeast in
a pint of lukewarm water, and stir in sifted flour until the mixture is
a little thicker than griddle cake batter. Set in a warm place free from
draft until it rises and begins to go back. Your sponge is now com-
plete. Add to the sponge one quart of lukewarm water one table-
spoonful of sait, two of sugar, same of butter; add sifted flour enough
to make a dough AS SOFT AS CAN BE HANDLED. Knead well. WHEN
THOROUGHLY LIGHT knead, make into loaves, place in well greased
pans for final rising.. This last kneading should be very thorough.

BUCKWHEAT CAKES,--Dissolve i cake of our Yeast
in 172 quarts of water or milk; add teaspoonful salt 2 tablespoor 'uls
molasses or sugar, 2 tablespoonfuls wheat flour, and sufficient buck-
wheat (about two quarts) flour to make batter. Let rise over n
morning thin if necessary. and fry on griddle. If wanted qui
double quantity of yeast.
