4 large chicken breasts,
boneless & skinless
1 pkg. dry fiesta herb
seasoning mix
1 head Iceberg lettuce
1 head radichio
1 bunch red radishes, cleaned
& sliced
2 ripe avocados, peeled &
pitted
1/4 cup Fat Free mayonnaise
12 cup Fat Free Italian dressing

Cut or tear lettuce and radichio into 1" pieces and toss together.
Coat chicken breasts with herb seasoning mix and refrigerate for
30 minutes. Grill over medium coals or saute in a non-stick skillet
with 2 Tbsp. oil until done. Slice diagonally into Yl” strips. Arrange
over bed of lettuce. In a blender, pureé avocados, mayonnaise
and Italian dressing. After well blended, pour over chicken.
Garnish with radish slices.
